We have a trip booked for Disney from Dec 18-26, 2021. We were going to buy an eight day ticket for our stay. Now our dilemma. We live in Canada and we can not rely on our government to know what they are doing from one day to the next. My concern is that if I buy an 8 day ticket, book my dates and then say in October I find out that I can not go, will I be able to cancel my park days and use the ticket at a later date. Thanks

Definitely - whatever you paid will still apply towards a future new ticket.

Also, if we are still in the same predicament 10 months from now, I may just sell everything and move to the North Pole.

Yes you can cancel the park reservations.
The tickets may expire before you can go but you can just pay a potential difference in price to get new ones.
