Yes, as above.....the new Disney Store gift cards can be used onboard....just look at the back of the card it should list Disney Cruise Line as one of the places. If it does not then it may be one of the older ones that doesn't work onboard.
The new ones have been around for well over a year now. If you don't have a Disney Store nearby the cards can also be purchased at Walgreens in the their gift card section and some other retailers as well.

So, just to be clear, can we use the actual card in, say, a gift shop on the ship? Or will they take the amount that's on the card and put it on our account? I thought this might be a way to give my kids their "allowance" for spending on the trip. But if the amount will simply be put on the account it wouldn't be worth the trip to the mall to buy the actual gift cards for them.
No, the kids will NOT be able to use the cards. You will have to "load" the cards onto your onboard account then your spending is debited from there. The only card your kids (or anyone else) can use is their KTTW card. The ship is an entirely cash-less system for purchases. The only cash used is for tipping - either room service (at the time of delivery) or you can pay cash for your regular tips at the end of the cruise.
