Disney Fun at Night

Will be going to Disney with my sister, mom, and my 2 boys in a few weeks. My sister and I wanted some nightlife a few nights while there...we are 30 something and both married. Any suggestions of spots/days of the week we should consider?

My favorite place is Jellyroll's on the Boardwalk - it's a dueling piano bar - singalong and sooo much fun! Adults only - a night away from the kids!
