If you have the time (and money) I would deff do US, IOA and Seaworld. Like others have said, IOA has lots of big rollercoasters but we have managed to fill up whole days at all three of the parks when we took our DS & DD a couple of years ago, they were 6 & 4 then and enjoyed all the parks.
Seaworld is one of my favourite parks to go to, whilst it has a couple of rides, al the shows are geared up for the whole family - no matter what the age. - Enjoy
