Does Disney sell and evening ticket? For instance - entry after 5:00.

Not to the general public. Some convention-goers are given the option to purchase "after-4" tickets at a reduced price, but they are highly regulated.

From the "Everything About WDW Tickets" sticky on the Theme Parks board:

There are three types of Convention tickets. These are only available to people who are attending conventions held on WDW. Normally purchase is via a web link provided by Disney through the convention's web site for pre-purchase, or sometimes at the convention itself. Verification of Convention attendance is required.

"After 2:00" allows admission to one park per day after 2:00pm. These tickets may not be upgraded.

"After 4:00" allows admission to one park per day after 4:00pm. These tickets may not be upgraded.

"Multi-day MYW Convention Base Ticket" is about a 10% savings from the regular MYW prices and includes one WPF&M visit.

for florida residents, they sell an epcot after 4 ticket annual pass. It's likle 150 bucks, but it doesn't give you free parking. I think the original purpose was to entice locals to dine at epcot.
they now sell a weekday annual pass for florida residents, again much cheaper than the other annual passes, but fewer perks.

Other than that, no. There's no discount for entering an hour prior to park close.

If you're arriving late in the afternoon for your vacation, it's only a few dollars more to add a day to your ticket, unless you have more options added. Then it might get pricey. But there's plenty of options like watching wishes from the poly or contemp to get you excited for your first day in the park.
