We'll be going to Grand Floridian during the free dining plan period. Once we become DVC members and stay using our points, we assume we won't be able to take advantage of things like that. Is that true?

Sure you can take advantage of things like free dining. You just have to book the resort at rack rate, purchase the tickets as required and get a package from CRO.
 
You can purchase the DDP while staying on DVC points, but no free dining, that's correct.

But only at DVC resorts, you can't get the dining plan at all if you are using your points outside DVC.

With the $95 fee and the high point requirements, you would be better off paying cash and getting the free dining if you want to stay outside of DVC.

Thanks for clarifying that! After re-reading the original post, it's not clear whether the OP will still be staying at the GF. I never think about that, as the points seem so high, I think you're better off staying at a DVC resort and paying for the DDP.
