Disney dining in January

I am a newbie and have some general questions.

If you have the deluxe disney dining plan you should make all sit down reservations prior to travel? how far in advance? can someone without the plan make an advance reservation and pay cash?

Yes. Advance reservations are recommended for any TS restaurants you want to eat in. You can start making reservations 180 days prior to your check in date. Anyone can make a dining reservation whether they have a dining plan or not and use a dining credit or cash to pay.
