Our daughter and her husband are planning to go with us,and we'll allbe staying in a two bedroom. My son-in-law is an avid golfer. I read that DVC members can get a discount on golfing, but would our son-in-law qualify for that discount?

DVC members can get the annual golf membership for $50, same deal Fl residents get. This gets rounds at any course after 10am for $35 all summer at any course. Different prices different times of year. Good for the card holder and up to 3 people playing with him,, and the card holder and the rest of the foursome also can get free club and shoe rental.
Rates after 10am for everyone go down,, more at some courses than others.
Rates after 3pm for everyone are about the same as a golf pass holder pays. But often afternoons there are rain storms. If golf isn't a big deal,, just hope for a nice afternoon and play then. If golf is a must, the $50 is worth being able to play in the morning.. If they want to play earlier than 10am,, there are no discounts.
I'm not a golfer but reading the rules suggests the member must be there and paying to get the discount. Guests are not entitled unless the member is playing/paying.
Maybe all you'd have to do would be go with him. As noted above, you as the member would have to buy a $50 one year membership. If it's for one or two rounds, it likely is not worth it. If you decide it is, you likely can finagle it without actually having to play though it appears you'd have to be present initially but it might be that just giving him the card or going by at your convenience to sign up might be enough. You could call the course(s) where he's planning to golf to be sure. Just make sure you get a name so you can quote it if there's a problem later. And as noted above, the discounts are only good after 10.

I know this is true - so just confirming. They won't even let you just go and check in with them - you have to play.
Just an alternative - see if you can find a DVCer that may be going at the same time and will be golfing that SIL can hook up with. DH and friend were always paired with someone while golfing. Lucky guy who came to a conference with his Dr wife ended up with them one day and golfed with them three more days and paid the DVC rate for March rounds - saved him a bundle of money.
