We'll do the free dining plan only. We went in 07 and again in 09 staying at the value resorts.
We don't worry about whether the sit down meals take up too much time as during the trip, we don't do much else except for the meals and chillin out.
Park time is not a big issue for us anymore except for late night Extra Magic Hours.
For example one day our dinner was at Ohanna at 5pm, so we had our CS credit at the Food Court for breakfast as late as possible, then we played a round of mini golf, then rode a bus to Contemporary, then rode around the monorail resorts, then went to Magic Kingdom and caught Carousel of Progress, then Haunted Mansion, then wandered to dinner at Ohanna. Then stroll the beach and had a couple of drinks. Then we went to Epcot for late EMH. Got there in time for Illuminations, then went to Soarin and Test Track, then got our snack and sat and watched the fountain dance for a couple of hours as the park emptied out, then went back to the resort and went to bed.
So for us, we are more about "experiencing the day, and just putzing around, and enjoying our meals". We don't feel like the meals interrupt our trip.
We have a very similar trip when we're not on the dining plan. The only difference is we stay at the campground and use TiW for 20% off our sit down meals. Instead of putzing around the other resorts, we putz around the campground on the golf cart, go have dinner somewhere, then go to late EMH, or if other "Fiends" are also staying at the campground, we chill at their campsite or them at ours.
