We have a similar situation and have done a fair bit of research on the WDW dining options for breakfast.
Firstly as we are staying at Polynesian the obvious choice for us is Ohana's as it's just a short stroll from our room.
We plan on a very early booking as we figure it will be quieter then, we also will stress on arrival if we can have a table in a quieter more secluded area.
I think buffet style or 'platter style' (as served at Ohanas) is preferable as you can serve yourself rather than have to wait for table service.
Ohana's breakfast is served on a huge silver platter, and you just help yourself from that. You can request extra sausage, bacon etc and the server will bring it across to you. Abundance of all you can eat or drink basically, with Orange juice and beverages freely available.
The theming of the restaurant is also very nice and should be suited to your needs.
Personally I wouldn't opt for Crystal Palace, as it can be quite noisy there, same applies to Chef Mickey's.
1900 Park Faire at Grand Floridian is an option and it's buffet style too, however the tables are very close together there which may not be ideal.
Personally overall Ohana's and Cape May Cafe (buffet style) would get my vote
