Tonight we had rotisserie chicken a la Walmart deli, and I made a big pot of mashed potatoes. While the potatoes were cooking, I browned some hamburg for shepherd's pie tomorrow night. Got it all assembled and topped with mashed potatoes, and all we have to do is put it in the oven tomorrow! Yay!

Anyone else feel a great sense of accomplishment when you get dinner ready ahead of time?

My next endeavor is to make baked pasta. Cooked extra hamburg for that tonight when I was making shepherd's pie!

I do i just started working more and dont have time to make dinner at 3 pm any more so its pre made or crockpot time..

I love the feeling of only having to make side dish when i walk in the door makes me smile to come home to an almost already done meal....:woohoo::yay::dance3::cheer2:

now if only the laundry would jump in the wash its self......:rotfl2:

today i made port chops and mashed potatoes, i also made ground beef 3 lbs to freeze for lasagna, tacos or sloppy joes, i also made a meatloaf to freeze and browned sausage for scallopin. i will freeze these and have available for quick dinner

I made a huge batch American chop suey. That will be for dinner on Monday and Tuesday. In the next day or two, I am making chicken parmesan. That will be for dinner on Wednesday. Thursday will be Chicken parm subs.

I don't have my meals cooked, but I do have planned out what I going to make.

Tomorrow we are having hamburgers and chicken noodle soup.

Beef Pot Roast
Cola Pork Chops
Honey Mustard Grilled Chicken
Parmasean Cube Steaks

Now I just need to stick to it and not cave to the kids.

DH is going to be going to 2nd shift which means we going to need to eat our biggest meal about 1 in the afternoon somehow I just do not care to cook at that time of day so I need to start doing lots of meals I can do most of the day before or couple days before.....freezing an reheating or cooking later dh hates tho if he knows I did it.

Because I work FT out of the home, for my sanity, I cook the week's meals on sunday. It's essentially two meals that can be eaten two night each, then I make pizza friday night.

This week, I made taco fixings - cooked the taco meat, rice, cut up the tomatoes, lettuce and olives and all will are ready for monday and tuesday. for Wednesday/thursday, i made chicken curry in the crockpot.

Casseroles are also great for this.

Yep. I too think "cool" when I have a couple meals ready for the week from the weekend. I made a crock pot roast, froze the meat ready as chili, and have the stuff ready for another crock pot meal.
