Is it possible to still be eating at a late dinner reservation after the parks close? If so, how do you exit the parks, and is there transportation? For example, if I have an 8:45pm dinner ressie at Le Cellier & Epcot WS closes at 9, there's a good chance we won't get out of there til 10:30pm (ok it's figuratively speaking, who eats that long with 2 kids!) I know resort buses run up to 1 hour after park closing - so if the last bus left at 10pm do we call a taxi? Has this ever happened where someone had a VERY late dinner ressie & say, tried to leave the park after 11pm or midnight?

You will be fine. Disney isn't going to let people hang high and dry without a way back to their room. We stayed for the Kiss Goodnight at MK...park closed at 9pm, Kiss Goodnight wasn't until 10:30pm...and buses were still going in and out. All they did was have some buses make multiple stops (i.e. we were on a bus whose ultimate destination was AKL so he dropped us off first). They say buses will run until about an hour after closing, but a manager at MK told us while we were waiting for the Kiss Goodnight is that they will run until every single guest is out of the park.
