Dinner ideas that reheat well in the microwave...

Hi everyone,

I see the budget meal thread pop up every so often and it got me thinking how many of these meals make a good lunch for the next day? So if you have any recipes that reheat well in the microwave the next day, please share. TIA! :)
 
Lemon Chicken:

1.5 lbs Boneless skinless chicken breast
1/2 cup white wine
1/2 cup lemon juice (fresh sqeezed is best)
olive oil
1 clove garlic
Lemon pepper seasoning (or other hebs of your choice)

Pound chicken breasts thin, sprinkle them with lemon pepper & saute them in olive oil (do them in batches if you have a small pan or a lot of chicken) until carmelized.

When done sauteeing chicken, add chopped garlic (or press the garlic through a garlic press) into pan & sautee lightly until fragrant. Add white wine & lemon juice, add chicken back into pan, cover & simmer until chicken is cooked through (about 10 minutes).

Serve over rice w/ a green vegetable. My hubby is reheating his second leftover lunch from this today.

Soups are alway great too, if you search www.wegmans.com, I love their carribean black bean soup & their pasta fagioli. I often make big pots of these & eat them for lunch.

My hubby also takes leftover grilled chicken on a salad for lunch a lot.
 
Grilled hot dogs and hamburgers freeze easily and microwave very nicely, chicken too.
