Dinner ideas "at home" for off site stay, quick and easy?

We are renting at Windsor Hills. What have you done in the past for easy, quick dinners? It's vacation so I don't want to spend too much time in the kitchen and we need to save a bit of money so we aren't going to eat out every night. And, I need something that can be put together quickly. We will probably be hungry for dinner as soon as we get back since the water parks close around 5.

Would love to hear what you have done!

I don't think DH will agree to frozen pizza and popcorn:: every night

I love quick and easy stuff all the time, so here goes:

Spaghetti
Frozen Lasagna
Mexican Chicken Casserole (the one w/ Doritos) PM me if you want recipe
Hot dogs w/ the fixins
Tacos w/ the fixins (beef and/or chicken)
Cold sandwiches
Fish sticks or Chicken strips

Have a great trip!
 
Chef Salad's..or crispy chkn salad (get the chkn already cooked)...or any type of salads...for a main meal....

Sausage & pepper Subs..

egg & potatoes omeltte...

meatball parm subs (meatballs already made in a bag w/sauce)

do they have out door BBQ grills, if so, hamburgers on the grill....yummy!
 
We stay off site and cook a few dinners. These can be done quickly.

If the home has a crock pot which many provide.

Boneless breast of chicken and half a jar of salsa which ever you prefer. Have tortilla wraps, cheese, and assorded fixins for chicken tacos.

Shrimp over pasta. A little evoo, butter, garlic, raw shrimp boil water for pasta, a little baged salad and you are good to go.

We generally use the grill for almost everything. We use a lot of tin foil and every thing goes on. There is little clean up but this is not a quick meal it takes a bit of time for green beans, squash, zuchinni, always use a bit of water in the tin pouches, for baked potatoes I par cook in microwave.
 

I cannot take credit for this idea- I remember reading a post from someone saying they went to Olive Garden and picked up the sauces and then just cooked their own pasta to serve with it.
I would definitely utilize a crock pot to have meat ready when you come back from a long day.
Sloppy joes and english muffin pizzas are quick and easy. The kids can make their own individ. pizzas on the english muffins. Fun for them to add the toppings.

We get a rotisserie chicken, Bob Evans mashed potatoes. and green beans or veggie from deli.

Spaghetti and meatballs. Use leftover meatballs for subs another night.

Chicken enchiladas or tacos.

My kids will eat tomato soup and grilled cheese anytime of year.

Banquet Fried Chicken - my kids love this since it is a "special" treat for them. I buy a couple of boxes and pop it in the oven to cook. Then we'll eat it the next day or two for lunch or dinner with salad and bread.

I'll also grill a couple big london broils one night so we have leftovers for later on for lunch and dinner.
 
We went to Disney last Dec with my parents. We stayed in a house in Formosa Gardens. Well, what we did was bring along our crockpot (we drove to Disney) and we would put something in it before leaving for the parks and it was all ready when we got back that evening. Super easy and we had yummy meals waiting for us. We did chilli, spaghetti , soup, roast, sourkraut and ribs just to name a few.
 
Anyone know if Bonnet Creek has crock pots in their kitchens or outdoor grills you can use? Thank you for all of these wonderful ideas!
 
Well Wal Mart has a great store made take and bake pizza. We got one once because we were in a hurry and the case was right on the way out. They are 6.99 for the cheese and I think 16 0r 19 inches put it with a bag salad and you are ready to eat.
 
Bonnet Creek has gas grills, but they do not have crock pots.

We always have grilled steak and salad one night.

Frozen burritos with a can of enchilada sauce, and cheese are easy heated in the oven.

A potato bar, you can precook the baked potatoes, or a taco bar is super easy. You can premake the taco meat, or do taco salads. I think a chip and sandwich night is another easy meal my kids love.

Have breakfast for dinner. Premake bacon and pancakes, just reheat, and fry some eggs!
 
We scour the frozen food section at the grocery store. You can find frozen lasagna, stir fry, egg rolls, pot pies, chicken nuggets, etc. The deli and meat sections will also have prepared fresh selections as well. We also grill steaks, hamburgers, and brats. Bagged salads are the vacationers delight.
 
I like to get pre-cooked bacon with that I make BLT's. It is a very quick and light lunch or dinner.

When driving down in a car ( summer months ride harley)I haul down browned hamburger cooked chopped chicken breasts the frozen skinless ones. Use that for tacos, sloppy joes etc. It's easy to make up casseroles etc an freeze put all in cooler then thaw an heat as needed an rather than heat whole casserole dish I fix our plate an microwave it. Sausage for breakfast is taken along too already cooked just got to heat the patties. I take chopped onion an etc for any meals I plan on cooking an tuna salad etc that I might make there.

When we ride harley down we go to store get sausage that I go ahead an fry up right then when we get back to condo an have ready to heat an eat for our stay. Buy eggs for breakfast. Sometimes I get extra to boil for egg salad an tuna salad an to chop up for on our dinner salads. Always buy a couple bags of frozen veggies to add when we eating our leftovers from resturants. We got 3 meals off 1 meal from Olive Garden addin the veggies helped the meals go further an was healthier for us.
