Dinner ADR's and Park Closing

I apologize if this information is anywhere on the forums, but the search doesn't seem to work.

My family and I are going to WDW Nov 28 - Dec 6, (on the dining plan), and I want to know how late we can make ADR's for in-park restaurants. Can we book right up until closing? Past closing? or do they cut it off an hour (or two) ahead of the park closing time?

The latest I have ever been able to book Rose and Crown (at Epcot, great place to see Illuminations, btw) when Epcot closes at it's standard time of 9:00PM, is 8:30. I have never asked how late they will seat people but I have also never really seen them seat people later than 8:45ish.
