Dining with Extra Magic Hours

My DH and I will be in WDW 9/6-9/12. I have tried to get "reservations" for about 6:30 or 7:00 at MGM on the night they have EMH until 11:30pm. They told me the only restaurant open on 50's Prime Time and they are completely booked. All other restaurants are not booking anything passed about 4:30pm.

I also tried to book at the MK and am told the only thing open is Liberty taven with limited availability. So my questions is...Where does everyone eat?

I would do counter service but are any og them going to be open? I figured if we are going to a park around 6:00pm and staying until 11:30pm that they would have more restaurants open since its right in the middle of dinner time.

We are DVC members but this is our first trip this year with the extended Evening Hours. Does anyone know if any of the counter service places are open until 7:00pm???

It's possible that the other restaurants may be open (except Sci Fi which is going into rehab for the week) and WDW has not released later dining times yet. On the 8th the MK is open till 10 pm (not EMH) and we cannot get anything after 5 at this point. Keep calling back to check!

There are very limited dining options during EMH in the evening.
