Dining strategies for busy days

With the the parks getting busier, does it make more sense (if you do just one sit down meal a day) to have that meal at lunch or dinner time? Is it getting harder to find available counter service options for lunch and/or dinner? For example, if we want to do a meal at Liberty Tree Tavern and maybe a snack at Sleepy Hollow treats or Pecos Bills, would it be better to make Liberty Tree reservations for lunch or dinner? Thanks!
 
My personal opinion is dinner, because there are several places that are offering reservation times close to park closing. For example, Magic Kingdom has been closing week nights at 6:00pm. Liberty Tree might have reservations available as late as 5:45, or even 6:00. If you could get one of those very last reservations, you can really optimize your time in the park and then be sitting for your meal when the park is technically "closed."
 
We've split the difference and made our ADRs mid-afternoon, but leaning more towards the lunch end. LTT, Yak & Yeti, Biergarten, BOG all in the 2ish range.
 
I decided to do lunch because the parks are busier at lunch and this gives me a break and then the crowds thin in the evening so I can ride more

I agree with this plan. We did this on our trip last week and it was great. Also, if you start looking for some lunch around 11-11:30 most people aren't eating yet. It gets busier noon-1. Utilizing mobile order for lunch is also great to save some time.

We do this most of the time though we lean toward supper. We call it lupper, and also do it at home a lot. We might have a light snack mid-morning toward lunch time, not something sweet but something like fruit or something savory (a smoothie at home) then a later lupper around 4, then a snack later in the night, again usually not something sweet because we just don't eat a lot of sweets.
 
I might be crazy, but I made reservations for both lunch and dinner...I figure we will need a mask break, and even if we don't order huge meals, we will have a reserved spot to eat and rest!
 
We did Liberty Tree Tavern after park close. That way, we did not lose riding time and we got to stroll through Magic Kingdom after dark with it almost empty. It was amazing. I highly recommend.
