Kind of off topic, but I saw pictures of the various restaurants on board The Dream, and it looks like most of the tables seat about 8. Does that mean my family of 4 will be sharing a table with another family of (up to) 4?

No, each serving team serves a 4 top, a 6 top and an 8 top. However, different configurations can be achieved by putting the various sized table together.

Many of the larger tables are in the center of the room. Maybe those pictures were just aimed more toward the center.

Oh, okay. I wouldn't have really minded sharing a table, but my preference would be just my little family.

If you want to be sure you have a table assignment that's just your family, I'd suggest that you contact DCL and have the request for table for just your family placed on your reservation. Most times such requests are honored, sometimes not.
