We are not big ADR people, and prefer to decide where we are going to eat the morning of or the day before.

How would I go about checking on availability while at our resort? What time is the earliest that the call can be made?

407 - WDW - DINE is the phone number. Alternatively there's a direct connection on the resort phone (it should be listed on the phone).

They will open up at 7am Eastern.

You can also ask at concierge and they may be able to help you as well.

And if you do call them directly, you will not be placed on a long hold as can happen when you are calling from home. One of the first prompts on that dining number asks if you are a guest already staying in Orlando or something like that. The 3 times that we have needed to call during our 2 trips last year I got right through to a CM after pressing the right # response.
