I just came back from my solo trip yesterday and I have to say that I did not find that there was too much food on the dining plan.
Maybe I'm just a big eater or maybe I'm not a snacker but I had just enough.
I used my counter service meal for breakfast each day, and used my snack credit mid-day and had my table service each night for dinner.
I suppose if I had been eating a lot of candy and snacks through out the day I might have been not hungry enough for dinner, but I pretty much only used my one snack credit during the day.
I found all of my table service meals to be a good value (against what the dining plan cost), and if you didn't feel like ordering an appetizer or dessert, it was still a good value for your dollar!!

We would eat a pastry in the room for breakfast, an early CS lunch, and a later TS dinner. It worked out real well for us. We ended up having quite a few snacks left over because we didn't eat between meals.
Our last trip, we found it to be just perfect! You just do have to make sure that you do not use your CS and TS to close together!
