Dining plan and guest coming in later and MME

My daughter and I will be going for our first DVC trip in November. We will be arriving on a Sunday, and would like to be on the dining plan (did this last year and loved it).
My husband will be arriving for sure on Thursday and would not be on the dining plan as he will only truely be onsite for 1 day (doing a day at KSC).
My best friend will be arriving later in the week but I am not sure when, and will be visiting a couple of days with her Dad, so she would not want to be on the dining plan.
So the question is, do I book the 1 bd. for 4 people or for 2?

Also my best friend would more than likely need to use Magical Express when she arrived, so how would I do that?

You have to buy the dining plan for the total number of people in the room for every night. So if you book it as 4, you will pay for 4 people for the entire stay.

If you don't put your friend on the reservation, she can't get DME.
