Dining option with DS(4) and DD(2)?

We are planning a trip to Disney (7-10 days) in Dec and my kids will be 2 and 4. I am thinking of doing the dining option but am wondering if it will be overkill. Has anyone tried this yet with small children? If you need to make PS for all your meals how does that work if the timing is off - too early or late, kids napping, etc. Also how does it work for the 2 year old since you dont pay for them - do they still get something for the counter service meal / snack?

I am pretty sure that you don't have to pay for children under 3 at the buffets - someone can correct me if I am wrong.

DH and I always buy the meal plans, but have decided that when we go this year, we are not. We will have out 1 year old DS with us (HIS FIRST TRIP!!!! :Pinkbounc ) and I think that we will end up doing more counter service/quick meals......
 
That is why we did a lot of buffets when I took my son before he turned 3 and my other will turn 3 the last day of our trip this year. Free for kid under 3 and it gave a lot of options for him also, since he never knows what he wants or if he will even eat when the food comes.

Consider a resort with in-room kitchens. Easting out 21 times with small children really loses its appeal . . .

And 2 yo does eat for free at a buffet. On a regular menu, there will probably be enough food to share between 2 & 4 yo and an adult. Or order a little sidedish of fruit, mac&cheese, etc.
