How can you tell how many DP credits a meal is?

How many dining credits is based on the restaurant, not the meal. All TS restaurants are either 1 or 2 DDP credits on the regular plan.

Ok so on the DDP if we ate 2 character meals on our trip it would take 2 TS credits per person for each meal. Esentially we would have to purchase a TS out of pocket for a different night?

You need to review the brochure (linked @ the top of the page in a sticky somewhere). Not all character meals are 2 TS credits, in fact, most are 1 TS credit. The brochure will outline which restaurants are which.

No, not every character meal is 2TS. In fact, most of them are only 1TS. If you'll check the stickies at the top of the dining plan forum, you'll see a sticky for 2012 Dining Plan and Brochure. Read through that and then go to the link for the Disney brochure. You'll find the list of restaurants near the end. The 2TS places have a purple number 2 next to them.
