if you don't like the policy and want the flexibility of choosing something each day, just don't make reservations. Do walk ups or schedule the day of.
Re: 1/1 change - In 2013, we didn't want to keep our ressie for Cape May that evening. I called Dining from our room. Asked if there was a way of avoiding the fee if we didn't show up. Was told to just reschedule the same ressie # for a future date & then if we don't want to keep that new date, cancel 24 hours in advance.
According to a poster on here who says they are a Disney dining reservations agent, it has changed. Any change the day of is considered a cancellation. You would have to ask for a fee waiver, and they don't have to give it to you. I'm still not clear on whether they are not permitted to give you a fee waiver for switching restaurants but you can ask. Just be aware before you try to do a switch, especially online. You'll be charged for an online cancellation.
Let's just throw out there that if a bunch of people start getting fee waivers for changing day of, Disney will probably put a stop to that pretty quick.
Have a question about this.....if I make a reservation for 4 but only 3 of us go, will I get charged a no show for #4 person?
My brother now wants to go with us next year and while that's fine, he probably will not come to all dinners, etc with us in lieu of more resort pool time.
I've already told him that I will be giving him a list of planned activities that are 'extra' and he needs to decide before I book if he will be going to those or not.
Also, am I correct in understanding that if I have a 9 am breakfast reservation, as long as I cancel by midnight the day before, that works?

Awesome, that was what I was thinking. If there are 3 of us, they have to put us at a 4 top anyway; it's not like they'd have to change tables. That gives him some flexibility (he's a 40 YO bachelor and wants to go because his 2 sisters and his only niece are going....but I know him - I can see him saying he just will get QS at the hotel and hang out because his Disney tolerance for the day has been surpassed)
