Difference between the week before Christmas, and the week of Christmas

I originally intended to go to DLP on 23rd December and staying til 29th December. My work now wont let me have that time off, so were thinking of going on 12th December til 18th December.

I know I'll be missing the Christmas eve and Christmas day meals you can get, but is there anything else that Disney does differently Christmas week?

Will I still be able to go to the Christmas special of the cowboy show?
