Difference between the champagne and mimosa call, premium, and signature bars

My fiance and I having a brunch reception at the California Grill at 10:30 AM, and we are looking into a champagne and mimosa bar. Does anyone know what the difference between the call, premium, and signature champagne and mimosa bars are? The price difference between the call and premium is only $5/person but we can't figure out what the difference is.

Well for the other bar items the difference is in the brand of liquor so I imagine that would be the same.

Call has different brands of liquor in the package than Premium and Signature. If you don't care about brands, just go with the cheapest. I also highly recommend that you have them bill the bar on consumption (BOC) instead of prepaying for a package.
