Some did, some didn't. It's actually university policy that if you miss more than 3 classes in the freshmen English classes that you fail. Generally lab classes allowed 1 absence before failing. Other professors modified that to decreasing the grade if you missed x amount of classes. Many big classes have clickers, and they take attendance via those (clickers are registered to a user). In others the profs will pass around an attendance sheet, and everyone signs in. And then in some classes, the prof didn't take any attendance, but could usually tell who was missing.
 
One college professor had an 8 am class that he called "the golden hour." His attendance policy was clearly spelled out on the first day: attendance wan't mandatory (as we were old enough to make our own decisions), but if you came you HAD to be there on time. Not 8:01, 8:00. At 8:01 the door closed and would not be opened again to admit anyone else to class. And, he noted, much of the final exam would come from class discussions, so not coming would not bode well for your grade. It was honestly one of the best courses I took in my undergrad years.
 
I don't remember back when I was first studying for my degree in the mid-90s. I just received a certificate from a community college, though...this spring, my business law professor did take attendance, halfway through each class period (he'd lecture, we'd take a break, then he'd take attendance when we returned). The college itself has an attendance policy, and he was actually the only one who actually called roll. I suspect my other professors "mentally" took attendance, though...

I had one professor who told us at the first class that there would be only two reasons he'd accept to miss one of his classes.

1. You were arrested and could not make bail.

2. You were dead.
 
I attended a community college for the first two years and most of the instructors passed around sign in sheets to keep track of attendance. I transferred to a four year school and depending on the sizes of the class some professors keep tracked of attendance through sign in sheets, class journal entries and similar mini assignments.
 
Most of my undergrad engineering courses did not take attendance. However, my graduate courses had homework due every evening essentially taking attendance that way. In my opionion, missing class will hurt your grade in the sense that you will have missed something, but i don't think professors should directly take points off. You are paying to be there after all.
