DHS touring plan critique please

I booked my FPs last night for HS. This is my touring plan and I would like feedback please! I will have an almost 5yo and an 11yo. We don't plan on leaving the park for a break. Reservation at H&V for lunch so we can rest and be in the a/c. I haven't included any M&G in this plan and would like to know where I should incorporate those, planning on Woody & Buzz for sure, possibly Mike & Sully and Cars. The shows/rides we have left out we don't plan to do, this is our 3rd trip and we know what to skip for our family.
I don't mind changing the Star Wars FP because it doesn't seem like that usually has a wait, but I couldn't find anything else to change it to.

My son won't ride RnR or ToT, I think he would have time for M&G while my DH and my DD ride those 2. Then we can meet at Animation Academy.

I think you will have time for some meet and greets while your DH and DD are riding RnR and ToT. You will likely have time before or after Animation Academy. If you miss/need to change your Star Tours FP, it probably won't be an issue because when we were there last week, it never had a long wait.
