DHS crowds on a Saturday?

Planning which parks to visit which days while on our vaca in January...would crowds be awful at DHS on a Saturday? There's not as much that we are interested in doing there so I was thinking we could do it on a Saturday so the other parks we want to do more in would be on the weekdays.

Maybe, but there are other factors that will have a big impact. Specifically, Extra Magic Hours.

If you are arriving for rope drop at a park with AM EMH, AND have Hoppers (and I'd advise both), then you can later hop to what will be a less-crowded park. Conversely, if you're not planning to hop, avoid the park with EMH, on Saturday and every other day; it will be far more crowded.

Day of the week at WDW has nowhere near as much importance as it does in the "normal" world. Saturdays may be a bit busier because locals come for a day trip, this is most evident at the water parks in the summer. But for the most part, time of year is much more important than day of the week. Don't plan your park days around expected crowds, it really doesn't matter. Pick the day you want to be in a park and go for it.
