DH bought a BBQ smoker today...

DH bought himself his first real step into barbecue and he is very excited. We have ribs out there smoking now and they smell heavenly. Our first honest to goodness 4th of July BBQ - not grill out!

Do any of you have/use a smoker? Care to share recipes for rubs, sauces, meat ideas, wood chip preferences (we have mesquite out now) etc...? We're newbies and having a blast and would love to hear how other people use theirs!

I had smoked chicken for the first time 2 days ago at a party--
it was amazing!!!!!!!!!!!!!!!!!!!!
