Yes -- there will be Pirate Night. It will likely be on the evening of Castaway (Day 3). Once your activity booking window opens you can confirm which night by looking which night Pirate Makeovers are offered at BBB.

On the 4-night sailings on the Destiny they have been doing the pirate night menu. Since there are 4 dinner meals on a 4-night sailing (Embarkation, Lookout, Castaway, Sea) you won't have to skip any rotational menus to experience the Pirate Menu. The rotation will likely be ABBC with the second night in B being the Pirate menu.

I'm thinking OP is thinking about skipping one night in the MDR for specialty dining and wants to experience the Pirate menu so wants to know which Signature Menu to skip.

I could be wrong.
