Instead of choosing a regular dessert, could I choose to get a piece of fruit or a mixed fruit cup on the CS dining plan?

If the CS location has fruit, then you can usually select that as your dessert option. Some places will also let you select a bottle of water.

Yep, in general I've been allowed to choose anything that was exchangeable for a snack credit (has the purple symbol beside it on the menu) for my CS "dessert," including yogurt, fruit, bottled water, fries, chips, etc.
