Demi Glaze for Steak

1 qt. Burgundy wine
10 oz. demi glaze base
1 1/2 oz. shallots, chopped
1 1/2 oz. fresh garlic, chopped
1/8 oz. black pepper
10 oz. water
1 oz. sugar
Add to sauce pan; wine, shallots, garlic and pepper. Reduce by 1/2. Add Demi glaze base to wine reduction. Simmer 1 hour. Add water if it is too thick. .
