I've been toying with the idea of upgrading, but not sure if it will be best for us. There will be myself, dh, ds(14), dd(12), dd(10)and dd(7). What is the extra per day? Is it possible to just upgrade to the DDP for just dh and I? I'm sure the regular DP will be enough for the younger 3. Any advice?

I was told here on the boards here it is $32 extra /day Adults and $10 per child/day

Everyone on your reservation must be on the same dining plan, so it would not be possible to upgrade only you and your husband unless you were on a separate reservation from the kids. Which you couldn't do anyway, because at least one adult has to be on each reservation.

She could put the dad, 14-year old and the 12-year old in one room with the Deluxe DDP and then the mom and the rest of the kids in the other room with the regular DDP. I don't think it's cheating because the 12 year old's credits are "adult" credits anyway.
