Going on first DVC vaca in nov. I have a family of 5 that will be on DP the other couple that is coming us will have 2. Are your snacks/meals separate for each family?

Dining plan credits are pooled by room so all KTTW cards for a room will have access to all credits.

The front desk can print you a listing of which key used which credits, but it's up to you to police who uses what. As previously posted, any key has access to all credits for everyone in the room.

They are only separate if you are staying in separate lodging. If you are staying in one villa, they are combined.

Exactly. If you are all in the same room, everyone has to get the plan for EVERY night the room is booked. Even though they are coming 2 days later, you will have to pay for the two nights they aren't there if they are in your room. You will also have to ration it accordingly. They can still use "their" credits towards table service/QS/Snacks for the two days during the time they are there. It would work out for them if they were going to do the Cinderella's Royal table or any other premium dining experience that uses two credits.

Since you are at party of 7 total, I'm guessing you have a 2 br booked. If you have a 1 br and studio or any other combo of rooms booked where they are staying in a separate room, they would then be on their own plan, separate from yours, and they would only pay for the nights they are there.

We had considered a scenario of booking a 1 br and a studio instead of a 2 br in order to get the dining plan on 1 room and not the other in order to share the plan (since we don't like a sit down meal EVERY day) but this is A) technically against the dining plan policy, B) comes with a big probability our rooms would be on separate floors, and C) the extra points required to book a 1 br & studio separately over a 2 br or lockoff would negate any extra savings on the dining plan.
