I have read on the net if you do not have your dessert on a QS meal you can use it as a snack later. Is this true ?

No, you have to order all parts of the QS at the same time. I've read here on the Disboard, that there are a few places that will let you order an ice cream and then come back to redeem it within a fixed amount of time. However, you cannot just forego the dessert part of your QS and have it converted to a snack credit.

Only in the sense that you can get a prepackaged dessert at a CS and take it with you to eat later.

There's no way to separate the dessert from the rest of the meal and use it at another restaurant or use it as a separate snack credit - the entree and dessert must be ordered at the same time from the same restaurant.

I think what you're referring to, are people who take their dessert "to go".. and then eat it later as a snack.
You don't get an extra "snack credit" for skipping dessert.
