This year will be my first time staying on Disney property, and also using the DDP. I would appreciate peoples responses to the following things:

Do you have to make reservations when using the DDP, if so, do you have to state this at time of booking?

If reservations are needed, is it essential that these are made a long time in advance?

Also, are there any restaurants on the DDP that should not be missed?

Whether you're on the Dining Plan or not does not affect whether or not you need to make reservations in advance. For some restaurants, you do; for some, you don't; and time of day and time of year matter. Some meals at some restaurants book up months in advance; others don't book up at all.

You should let them know you're on the Dining Plan, so they can help you determine what is and is not included, when you order. However, it doesn't matter much if you tell them in advance or not.
 
If you have specific places you want to dine at, then reservations need to be made. We went in March 06 and had reservations every night but one. We had a little trouble find a place to dine that night but we were able to find a place.

If you have young kids, then Chef Mickey is a great place. Its a buffet and the characters sing and dance with you during the dinner. It was AWESOME for the little ones that were with us. The food it ok but we were really there for the characters
 
Our favorites are Le Cellier, Canada in Epcot and Liberty Tree Tavern, MK.

These are favorites for DW and I.

Make sure you book Le Cellier as soon as possible. They book up FAST.
