I’ve seen many reports here of that being done. DP just has to be for length of stay, and if that’s only one night (even if you’re moving to a different resort reservation the next night) then you only have to purchase one night of DP.
If you have a one night stay, you may be able to get the dining plan for one night. But you have to purchase the dining plan for everyone on the reservation for every night of your stay.
If it’s just a one night reservation then yes. One of the main blogs (maybe Disney food blog but don’t quote me) booked a night at Pop just to do the DDP for one night and posted their review. I found it to be interesting!
