In follow up to my earlier question and in an attempt to jumpstart my brain...

What are your two favorite things to cook/eat at home?

Tonight - Burritos.

As for my two favorite things - chicken enchiladas (only I just stack in the pan, don't take time to roll then) and turkey meatloaf with sweet potato fries
 
Amy - Wow, is all I can say!!! I look back on my career as a teacher and am amazed that I came through it unscathed! I'm a very "hands on" person, and can't count the number of times I hugged students, or put a hand on a shoulder, etc. I was also the teacher the kids would come to for a Tylenol. That could have gotten me fired for dispensing drugs to kids. Yikes!

And I was the same way, Glynis, however, I had ZERO rapport with the student who accused me. She literally sat in my class and refused to talk, let alone look at me. She had a zero percent, but neither her counselor nor her mother would put her in another class or switch her to study hall. That was second semester, and her accusations took place the fall of the next school year. It was a mess!

I love to grill, and I do so all year round.

My favorite at-home meals are my spaghetti and meatballs and pork chops, rice, and gravy. I am also a big fan of Glynis' pot roast!

I love Bunco!! I need to find a group around here.

Tia-my girls love make your own burrito night (I make guacamole)...I love making mexican food. Cassidy's other fav is chicken toes (unbreaded chicken strips), mashed potatoes and gravy.


I actually don't like cooking a whole lot so I get in a rut faster. I am loving the every other Thursday cooking class...though I had to miss last night's.

We eat the same stuff all the time.
Chicken breast, pork chops, pork loin, rotini pasta w/red sauce and ground turkey, grilled turkey burgers, tortellini, General Tso's chicken (comes from the frozen section at Sam's), rotisserie chicken, Hamburger Helper, pizza, Hormel microwave Beef Roast, Jennie-O frozen turkey roast. DH buys steak sometimes - I am not good at choosing meat.
 
Tammi - Your pictures are wonderful!!! The kids are so grown up, and Alyssa is just beautiful! She really knows how to take a good picture. When did they get so grown up?
 
Tia - I don't think I could narrow things down to 2. I didn't start cooking until about 7 years ago, and now I like to try new things. I have a baked chicken reuben that is amazing, and I love it a lot! I also like to make my pot roast, several pasta dishes, and anything sweet. I like to try at least 3 new recipes a week. It makes cooking more interesting. Some things I try are good, and some are not, but it's always interesting!

Well, I think that we're going to take the kids to see the fireworks tonight. Our town started doing them 2 nights during the fair/carnival instead of the 4th. Tomorrow I'll take them all to the parade as well.

I am turning the question back on you. What are you favorite foods when you go out to eat? Do you have any favorite food categories?

I love Chicken Haystacks. Below is the recipe, I constantly change it and serve it slightly different each time. Hence the random added in notes.;)

HAWAIIAN HAYSTACKS

2 (10 3/4 oz.) cans cream of chicken soup or sometimes I use a can of cream of Celery and 1 chicken
1 c. chicken broth or water
2-3 c. chicken, cooked & cubed
4 c. cooked white or long grain rice
1 (9 1/2 oz.) can chow mein noodles
1 (20 oz.) can pineapple chunks, drained- I mix some of this this juice with the sauce or the rice
You can also add coconut milk to the soup and chicken mixture, it depends how sweet you want it.

I do not put this stuff with it all the time, but you can depending on your tastes. Sometimes I cook the pepper, celery and onion with the chicken mixture. It depends what you and those you are serving like. I have made it differently for different groups of people.
3 med. tomatoes, sliced
1 c. chopped celery
1/2 c. chopped green pepper
1/2 c. chopped green onions
1 c. grated cheddar cheese
1/2 c. slivered almonds
1/2 c. coconut
Maraschino cherries

Combine soup and chicken broth in saucepan. Add chicken and simmer 8 to 10 minutes until heated through. Sometimes I add the pineapple to the chicken and broth mixture and heat it. Other times I leave the pineapple cold.

On each person's plate they layer rice, chow mein noodles, the chicken mixture, pineapple and any other toppings they want to put on their plate. Each person can customize their meal and create their haystack.

The week is almost over. We need to head out of here by 11 AM tomorrow. The boys aren't ready to go, we've all had a good time. There is just so much to do. Today I played horseshoes, first Ladies Singles in which I placed 2nd to my SIL, then SIL and I teamed up in the mixed doubles. We pulled off a nailbiter victory. We were actually trailing 18 - 6 at one point :eek: Thankfully we both started throwing ringers. We also went out on the Sunset Cruise. They have a large double decker platform boat that seats 95 people. We had received coupon books when we checked in that had things like free mini golf, free boat rental, free cruise, free ice cream,etc. So today we tried to use up what coupons we could. Chris and Colby went to the driving range and hit 3 buckets of balls while the other boys and I were busy with competitions. I really wish I had photos to share, but between all the rain and participating in so many things I haven't taken the camera out even once. Maybe I'll try to take some pictures in the morning. Oh, I forgot that we got mooned by a guy on a jet ski while we were on the cruise.

Monday night Summer and I went to the theater production of Aladdin. They did a phenominal job. Each night they do some sort of show, many are very intricate theatrical productions. Monday nights and Tonights were free so we went to those. Tonight the staff did Suessical the Musical. Another wonderful show. This resort really has a lot to offer and we would recommend it to everyone. Going the first week of their summer season makes it an even better value as this week was 25% off and we got the coupon books.

That's what I do. I used to subscribe to lots of cooking magazines. They've been stacked in my bookcase for years. I'm slowly going through them, and ripping out the recipes that sound good to me, and trying them. I've found some really amazing recipes, and some that sounded good at first, but when we tried them the family hated them.

I love this! We used to eat it a lot when I was a child. My kids have only had it a couple of times. Sounds like an amazing place, Deb! I'm so glad that you've been able to relax and enjoy being with your family! I wish we could find a place like that around here. I may just do some scouting around tomorrow!

Thanks, Becky! That's a great way to look at it. My top eat out is Mexican food. About a third of my regular recipes are also Mexican. I'll think about the things I would order elsewhere and see where that gets me.

Thanks for the reminder. I have a whole stack of magazine recipes in a file folder somewhere. I'll have to see where that is. I know most of them are pretty simple too since their out of more "Mom" magazines that focus on quick and easy.
