DD turns 21 on our last day... would love suggestions

Trip planned for late May, staying at CR... DD turns 21 on our last Disney day, but we fly out that afternoon so we don't have park tickets. I have a Kona breakfast planned for the morning of her birthday before we check out. The previous day we have a Magic Kingdom reservation and will stay until park closure, whenever that ends up being.

My question: she will turn 21 at midnight... would there be any place on the monorail loop to get her an adult beverage that late?

I do not believe there is any Disney resort bar open past 11 or midnight. Your only luck would be something like Jellyrolls on the BoardWalk that closes at 1:45AM.

Perhaps do mimosas or bellinis for brunch instead?
 

I would pack a little something with you, or pick up something you'd think she'd like, and have it that night at your resort at midnight. And as others mentioned, maybe a mimosa at Kona cafe or a bloody mary. Not sure where you are staying but you might find a nice spot to sit and celebrate her at your hotel at midnight.
 
Gosh, I found a site from 2017, and so many lounges were open late!
On the loop, the WDW site says Trader Sam’s is open till midnight. You might see if you could prearrange for them to serve her just as they are closing , but that would be a long shot. Otherwise, Jellyrolls seems to be it.

Disney Springs used to be open until 2 am!
 
Some states have their law setup where you can drink at like 9PM the day before your birthday. Not sure about FL...

I love this idea!!
Amorettes in DS sell very reasonably priced full bottles of champagne. You can take the bottle unopened. It is chilled and they put as many plastic champagne glasses as you need in a gift bag for you free of charge.
