If we use the DCL transfer from MCO to the port, do we have to hand off our luggage to a porter when we arrive, or does it go directly to the ship?

You hand it off to the porter and then it goes to the ship. Are you traveling direct from home to MCO to DCL?

If so, you should receive luggage tags to place on your bags, marking them for DCL transfer people to pick them up before they hit baggage claim. they are loaded on a DCL transfer truck and taken to the ship.

If you are taking your bags to the bus yourself, put your luggage tags on your bag before getting to the bus, hand your bag off to person outside the bus, board the bus, and then any of your bags with the luggage tags will go directly to your stateroom on the ship. Once you hand them off before boarding the bus, you won't see them again until they are delivered to your stateroom.

Your other option is to put the tags on your bag before you leave from your home airport and your bags will be delivered straight to your stateroom the ship. You won't have to hand them off to anyone!

Nope, flying in late (11:30pm) the night before. Staying at the hampton inn and suites airport, taking the DCL bus the next morning from the airport :) we're concierge level so I don't think we have a particular boarding time, I think I'll aim for around 11 am, I don't want to be too early, yet I would like to beat some of the crowds!

If concierge the pressure is off, get there by 11 am you could be on at 11.15am.

Rooms aren't ready that early though, are they? I'd like to maybe have some lunch, do the aqua duck before it's too lined up, perhaps order out all hands on deck platter prior to sail away as DH wants to sit on our verandah for the sail away party, he's not good with crowds

Concierge rooms will be open earlier than normal and access through concierge lounge.

They will advise you when they are read, often circa 12.30>1pm.

That has not been our experience on our two Dream concierge cruises.

Op since you're staying away from mco that night you'll bring your luggage back, hand it off, and see it in your room. If you were staying at the mco Hyatt it could be picked up for you and taken to the ship.
