I'm going to Disney world over Easter with two small kids. While we are doing a bunch of breakfasts/lunch TS, we would like to do a few dinners as well.

The issue is, I'd like to be flexible since I'm not sure how they will be temperament-wise that time of day.

Is it typical to just make a reservation day of somewhere in magic kingdom? Or is it really unlikely I'll be able to do that over Easter?

Yep, there will be things available day of, but don't expect CRT or BOG. Your best option, check right before midnight, you have until then to cancel without a fee,so that's when a lot of people cancel. Good luck!
 
Easter week is extremely busy so most cancellations that show up will be snapped up quickly. The deadline for cancelling without paying the $10 per person no show fee is the night before so it is hard to say how many will still be available the day of. The other limitation is there aren't many TS restaurants in the MK that take reservations - Be Our Guest, CRT, Skipper's Canteen, Liberty Tree Tavern and Tony's. It will also depend on the size of your group with smaller groups (i.e. 4 or less) having a better chance because restaurants have more tables for this size group compared to tables for 5 or more.

While flexibility is good, booking a TS on the day of will be difficult unless you are willing to take whatever time and place is available. Be prepared to dine at a resort rather than in the park or consider Counter Service in the park.
