We usually travel with kids, stay at Poly and spend a lot of time in the parks. Just booked a last minute couples only trip  . We will be staying at SSR and would like to try something we wouldn't be able to do with a 2 and 5 year old along. Doesn't have to be super romantic just relaxing/fun/entertaining.

My Fiance and I did the Monorail Crawl when we stayed at poly but my vote is for Disney Springs since your staying at SSR. That would be a nice walk to and from.

In your poll I chose: Something Else
Do something you would never do with the kids.
It depends on what you are into:
sports: golf, mini-golf, fishing, marathon, bowling, ESPN Club, WWS/ESPN Zone, etc
shopping: DTD, area outlet malls, large scale malls
drinking: Jellyrolls, Raglan Road, monorail tour of resorts, walking tour of resorts in the Boardwalk area
movies: DTD 24 screen theater some with meals served by waiters
night clubbing: Jellyrolls, Atlantic Dance, Raglan Road, Citywalk
resort tours: monorail tour of resorts, Boardwalk around the lake tour of resorts, horse drawn tour of FWC, AKL/AKV
offsite: Gaylord Palms Resort, Citywalk, swamp tour
eating: Formal GF 5* Chef's Table @ V&As

DH isn't the biggest Disney fan, but he loves the festivals at Epcot. Your situation is probably different since it sounds like you both love Disney, but staying in one park is more relaxing than doing the monorail crawl. That's fun too, but for a "date" I'd choose Epcot to keep it a bit more relaxing. Don't forget to go earlier in the day (10:30am ish) so you can be there when the booths open & avoid some of the weekend crowds. I'd also suggest checking out jellyrolls in DS [JK I shouldn't be on here when hungover, it's at Boardwalk of course]
at night!

I picked the opposite from MusicalAstronaut, I love F&G and go every year but it's also something that can be done with the kiddos so not very date night sounding to me. I'd do the monorail crawl. It can be very relaxing, it's easy to do and probably not something you would do with the kiddos. I'm not a fan of DS, I can get just about anything I want as far as shopping in the parks and there are so many food and bar options in the parks and resorts it's just worth the trip for me. As far as something else, maybe a night browsing around Boardwalk with a stop at Abacadabar then supper at Flying Fish. Also, almost all the restaurants at Swan/Dolphin are fairly nice and might be a nice no kids get away. I would also think about maybe a tour the kids might not be interested in. I go often and sometimes go solo, sometimes with my adult son. We tend to spend less time concentrating on rides and more time just enjoying the details and go slow. We once sat on a bench across from Italy for a hour with a glass of wine and just looking at the details on the top of the building and enjoying watching the people. We have great imaginations and love to make up stories about people and places and WDW is perfect for that. We were sitting at a table in Flying Fish and getting very bad service so we had a lot of time on our hands, there was a picture of a giant fish standing with it's fin around a woman dressed in 20s style on a boardwalk. We had a blast making up stories about that picture, as a matter of fact the people at the next table heard us and joined in. So I guess I'd say the best thing to do without little ones is go slow and enjoy the place.

On St Patrick's Day I would be at/near Raglan Road, but then I am Irish!
