We have never used DAS at Disneyland so I have a few questions.

1. Do you have to go to each attraction to get the return time or can you do it on the app? If you do it in person, does the person with the disability have to go to get the return time, or can someone else act as a runner? (I know the person with the disability has to be there when we go back to ride).

2. I saw you can only have one valid return time at a time, but I've also read that they don't stick to the return times so if there is a meltdown or you need longer to rest in the afternoons etc., it is fine. Can somebody clarify? Our loved one is much better in the morning and has a harder time with waiting/crowds in the evening, so the DAS would be more beneficial at night if we could "stack" 2-3 for when we return to the park after rest time. Is that allowed?

No, you can't stack. You can't get the next return time til the first one is used or deleted. So if you get a return time for Haunted Mansion at 1130, you can used it anytime in the day, but you can't schedule the next one til you use or delete HM.

You can also try to set up the DAS in advance (via video chat, other threads have had the link). Once qualified, you can pre-book two rides per day with the DAS. I'm unclear on the timing of how those get used during the day, but perhaps that would help with having some more options in the afternoon/evening when things get challenging.

The other options i purchasing Genie+ You can book those every two hours (or after you scan into the ride), so you might be able to stack some for the evening if the return times were late enough.

You can make them in the app. The only caveat is as of 3 weeks ago they are for the park you are currently scanned into if in the app. If you are going to park hop you can go to a GR kiosk and make one for the other park.
 
You could pre-book the 2 for the evening as mentioned if that is the more difficult time, but my understanding is that doesn't apply to the rides that require Individual Lightning Lane, and those have a one hour window you must remain within. Those are independent of the day of DAS selections to my understanding as well, and so therefore you can stack a little. If you took a break and selected a time before leaving the park (you have to be in the park to select return times)., and had the two pre-selected for say 5-6pm and 7-8pm then you could get 3 rides in a decent window. Not sure if this would help you at all.
