I know I have read about many people customizing their menus and was just wondering if this is possible with all types of meals? We would like to remove a few choices from the dessert party menu (which will be our rehearsal "dinner") because we would like to add at least one "hot" food item. We would also like to cut a few things from our buffet dinner to save money. Is it possible to do this even if you are having stations? We really need to stick to the $125 pp or very close to it, and almost all the menus are close to that without adding drinks and food for the cocktail hour, and it all just seems like soooo much food!
