You can mix and match items or add things from Disney restaurant menus too. And if you want a dish but don't see it, they can try to re-create it for you.
There are yacht and beach club lunch buffet menus on magical kingdoms, not sure if these have been replaced yet. I'm having the Asian spice one next month at ariels.

Most of the menus on Magical Kingdoms are out of date, but that's OK. Disney can pretty much whip up anything you ask for, so using older menus is a good way to get more ideas than are offered on the new global menus.
You are not restricted to only those menus that have the name of your venue on them!
