You can use CC at almost everything in WDW....I haven't had a problem (I hate cash), but I have heard some of the vender carts are hit or miss with their machines. I pretty much take enough cash (like $40) for snacks, etc....and plan on paying CC for all meals and shopping.
Try checking with your credit card company. They may actually give you better rates than exchanging for US dollars. I know last time I traveled to Canada the rates for what I charged were better than for what I exchanged. It may make sense to charge everything to your room (if staying on property) and then pay by CC once at the end of your trip.
The only place that I found that wouldn't take credit are the carts selling the light up toys after dark. That was the only time I had to pull out cash - $15 for light up mouse ears!
Unless your debit card has a Visa or MC logo, you can't use it at any retail locations at Disney.
There is no option to enter a PIN for retail transactions at Disney. One notable exception is the HESS stations, I've used my TD Canada Trust Debit card with PIN there.
I brought $150 in cash for our entire trip (with access to more via ATM if I needed it).
When I arrived home, after 9 days, I had $10 left. And that included paying for all the tips (valet, bell services) and tolls for the drive.
In short, we found we didn't need much cash at all. Everywhere we went, including the "street" carts for snacks, either took the DDP, took a credit card, or would charge to our room. I'm SURE there are places that don't, still, scattered around, but we didn't find any.
