CRT -OOP question

We are on the DDP, but I am planning on paying OOP for CRT (if we can get it!) I know that I will be charged at the time of booking, and that I will also be charged tax. But I want to make sure that it will also include the tip paying OOP. (I know tip is no longer included on the DDP, but I heard that at CRT and HHDDR it is still included - is that correct?)

Still playing with numbers to see if OOP (with tax) is better than using 2 TS but paying no tax. We are going in August - so there should not be a holiday surchase then, correct?

We went to CRT last month - we were on the DDP but paid up front OOP too when we made the ressies for CRT - the cost of the gratuity was factored in to what we paid up front at the time of booking. We didn't have to pay anything else when we dined there.
