So when is the least crowded time to visit WDW? Now that we don't have to work around a school schedule...we're not sure when to go...

Check the regular Disney resort seasons for whatever times are still considered value (not the DVC seasons) and that will give you a good idea.
 
My plan in a year or two is early May. I can see the Flower and Garden festival and it shouldn't be quite as crowded as early June.

So when is the least crowded time to visit WDW? Now that we don't have to work around a school schedule...we're not sure when to go...

It happens between 5 p.m. and 6 p.m. January 27; the only time of year the Dumbo line falls below an hour. Otherwise, you can assume it is the latter part of January after MLK time, and first week to two of February, first three weeks of May, and Sep after labor Day weekend time. May and Sep have an issue that many are not aware of if they don't go that time of year -- lovebugs.
 
We went the Week of MLK week this past January and I thought the crowds were really low. We also like the week in Sept., usually 16th or 17th until the 23rd or 24th.

I just happened to be in Orlando this year in early March when the F&G Festival opened. It was so nice seeing all the flowers (some weren't even out yet). We have been before when it ran into late May, but that's changed now.
 
Have never been in early May but that is when I would LOVE to go. Right now we are stuck not only with the best times to go for the kids but also the best time for us to take off from work. Unfortunately, for us that is anytime between November - March. We have been in February and it was not crowded at all but both times it was FREEZING!!!! We have been going in November for the past 3 years and like it best out of our available times.
 
We always go MLK weekend in January....fabulous time to go! Very low crowds - the most we ever wait for a ride (aside from getting FP) is maybe 15 mins? Even if it's 60's in FL, it's still 30-40 degrees warmer then what it is at home! The fact that I can go outside without 3 layers of clothes and a winter coat is enough for me!
 
agreed with late Jan/early February! Sept is also light but it is always super humid!!!
