Crockpots

I had a bunch of them but I think I left them in my night table last time I was at the Poly!! :rotfl: :rotfl:

We like to take boneless skinless chicken breast and put them in the crock pot with about 2 bottle of BBQ sauce, I usually mix two different flavors. Set it on low when I leave for work. When I get home I turn it up to high for about 30 minutes while I finish whatever we are going to have with it, it is so tender you can take two forks and shred it like BBQ for sandwiches. This is one of my favorite meals and will feed us for a couple of days.

*** Have been known to bring corn on the cob, baking potatoes, foil, and butter to work with me - we have a kitchen here at work and after lunch break I'll pop these in the oven in the afternoon - take them out when I'm ready to go home, wrapped in towls in my picnic basket. This keeps them warm. When we get home, all I have to do is shred the BBQ and serve the meal!!!!!!

Our other favorite would be Pot Roast. Rinse the roast and place in crock. Cut up some carrots and potatos, maybe a little onion if you like. I mix up an envelope of brown gravy and add it with a little extra water and let it cook on low all day.

** My dad used to work on appliances, etc. and he would have a cow if he knew I left stuff plugged up and on when I'm not home. I guess it is a bad habit.

No favorite recipe but a favorite convenience. I love to put frozen roast in there during the early morning. Chop up some onions and layer them in the bottom. Put the roast on top, set it on low and it's ready at the end of the day. On a good day, I'll peel some carrots in the afternoon and lay them across the top of the roast. Meat & veggies, just need to add a couple of things and presto -- dinner is done! :teeth:

I have a huge Word file full of crockpot recipes (with WW points attached and nutriential info) if you want me to email it to you. Just PM me =)

I like to fill mine with coke that I got from my refillable mug and add condiments from the snack bar restaurants. It is amazing what you can do with a package of ketchup.

I all seriousness, I make beef stroganof. Put in a package of stew beef, add two cans of cream of mushroom soup. Cook the meat on low all day. Add two beef boullion packets and 8 oz of sour cream. Heat through and serve over noddles.

I am a crockpot cookin' Mama! :teeth:
We do spaghetti sauces, soups, stews, desserts etc. A favorite recipe:
Thai Chicken from Betty Crocker Magazine:

1) 8 skinless chicken thighs
2) 3/4 cup salsa
3) 1/4 cup peanut butter-creamy or chunky
4) 2 tablespoons fresh lime juice
5) 1 Tblespoon soy sauce or fish sauce
6) 1 tsp fresh grated ginger
7) lots & lots of fresh, minced garlic--I use about 6 - 10 cloves

add # 2 - 7 to mixing bowl , blend well. Add chicken thighs to crockpot, pour soy liquid mixture over all. Cook on low for 8-9 hrs.
serve & garnish with chopped peanuts (we use unsalted dry roast) & chopped cilantro.

Remember, fresh lime, garlic & ginger will make a huge difference in the dish-
Fresh cilantro & the peanuts aren't just for looks, they actually do add a lot.
Some family here do not like cilantro, so they skip it & still like this meal

Serve w/rice.
You can find reasonably priced jasmine rice in some supermarkets. For an even tastier rice use cocanut milk instead of water. I'm a cheapie so I add equal amounts of (skim) milk to fully fatted Cream of Cocoanut milk (the heavier can; there is Cream of C & Cocoanut milk; the milk is pricier to use in this way, so I just dilute the 'cream' with skim milk)
sliced fresh fruits are a good side dish--mangoes, pineapple etc & maybe some Thai iced tea-
do all yr prep the night before & just add to crockpot that morning. fast & easy!
